AI launched to grade tuna fat

Electronics maker Fujitsu, Japanese startup Sonofai and others launched an AI system that can grade tuna.

The system can determine the fat content of albacore tuna in a non-destructive manner.

The tail of a frozen tuna is normally cut off to grade the fish, but the device uses ultrasound waves to inspect it.

Fujitsu said that the AI system’s grading accuracy was slightly higher than that of humans.
